Moraiolo is an olive oil that knows how to take centre stage. Its bold flavour, with elegant bitter and peppery notes, makes it perfect when used raw on freshly toasted bruschetta, to accompany grilled red meats or game dishes. It enhances legumes soups and grilled vegetables, turning every recipe into an authentic flavour experience.
Moraiolo is an Italian extra virgin olive oil, cold-pressed from olive trees with an average age of 80 years and produced exclusively from the Moraiolo cultivar, the most representative of Umbria.
The harvest takes place from early October to early November when the olives are at the right level of ripeness: during the first two weeks, it is done by hand due to the strong attachment of the olives to the branches, and then concludes with the aid of mechanical shakers. Each variety is harvested separately and brought to the mill within 12 hours to ensure freshness and quality. After an initial phase of leaf removal and washing, the olives are cold-milled individually in a continuous-cycle mill at a temperature hovering around 22°C. The resulting oil is filtered to preserve all its organoleptic properties and stored in stainless steel tanks.
The result is an extra virgin olive oil with a rich and pronounced sensory profile: on the nose, it gives off scents of fresh grass, green almond, and artichoke. It’s a medium fruity one, where the medium-high bitter and spicy notes blend into a perfect balance.
