The character of Umbria captured in every drop

From nature to the drop: our care at every stage of production

We believe that exceptional olive oil is born from respect for the land, the olive trees, and the rhythms of nature. Our olive groves stretch across the hills of the Monti Martani, in the heart of Umbria, a region that has preserved the art of olive cultivation for centuries. On these hills, where a favorable microclimate meets fertile soil, we carefully cultivate Moraiolo, Frantoio, Leccino, and Canino varieties.

The production of our olive oil begins with pruning, carried out at the end of winter to ensure the tree’s balance and stimulate new growth. This is followed by fertilization, carefully planned to provide the olive trees with the proper nutrients.

Between October and November comes the most anticipated moment: the harvest. The olives, carefully selected and gathered both by hand and with mechanical aids, are transported to the mill within a few hours to preserve their aromas and properties. There, after thorough cleaning, they are cold-pressed using modern technologies, a low-temperature process that maintains the fruit’s organoleptic qualities intact.

Every stage of extraction is carefully and expertly monitored, because the quality of the oil depends as much on the fruit as on the processing. The oil is then filtered and stored in stainless steel tanks, protected from light and heat to preserve its freshness and aroma.

Bottling, carried out with the highest hygienic standards, completes a journey defined by passion, expertise, and respect. Each bottle of Mandoloni Oil is the result of this commitment: from olive to table, with no compromise on quality, embodying the authenticity and excellence of our land.

The region

Umbria has always been a land of olive trees. Here, the olive is not just a crop but an element that has helped shape the environment, protect the soil, and make the landscape and culture unique.
Our olive groves are located in Spoleto, at the foothills of the Monti Martani, in the heart of the Umbrian Valley. This unspoiled territory, dotted with medieval villages and rich in traditions, provides the ideal conditions for producing superior-quality fruit: optimal sun exposure, natural slopes, and a microclimate that gives the olives an unmistakable organoleptic character.
Each bottle of Mandoloni Oil therefore encapsulates not only Giulio’s passion and care but also the strength of a land that has preserved the secret of its “green gold” for centuries.

Every oil tells a story: aromas, flavors, and traditions that speak of Umbria.

Our cultivar

The identity of Mandoloni Oil comes from the cultivars that grow in our olive groves, carefully selected and tended to ensure an extra virgin oil with an authentic character and a rich array of nuances.

Moraiolo

It is the emblematic cultivar of Umbria, small but resilient, perfectly suited to hilly environments. For centuries, it has been a staple of our region, producing an oil with a bold and unmistakable flavor, marked by a pleasant balance of bitter and spicy notes. It is especially valued for its intensity and nutritional qualities, making it a true ally in the kitchen and in the Mediterranean diet.

Leccino

Widespread throughout much of central Italy, the Leccino is a vigorous and versatile tree, able to adapt easily to different environments. Its oil is harmonious and delicate, with floral notes and a slightly bitter and spicy aftertaste.
It is the cultivar that brings softness and refinement, adding elegance to the blends.

Frantoio

This variety is common throughout much of central Italy. The oil produced from it is recognizable for its fresh-cut grass aroma and its balanced, fruity taste, combining pleasant bitter and spicy notes. It is a cultivar that delivers complexity and lingering flavor on the palate.

Canino

Originating from the Viterbo area, the Canino is a tree that does not require specific soil conditions and produces an oil with a balanced character. It stands out for its rich aromatic profile, where bitter and spicy notes blend naturally.

Exclusively extracted from Moraiolo olives, a typical Umbrian cultivar, this single-variety oil reveals the full character of the Umbrian territory. With a bold, bitter, and spicy flavor, it has a green color with golden highlights, perfect for those who appreciate an intense and authentic oil.

Passione Oil

Moraiolo, Leccino and Frantoio

Passione is an Italian extra virgin olive oil, cold-pressed from carefully selected olives. Versatile and harmonious, it stands out for its slightly fruity flavor and delicate balance of bitter and spicy notes, making it ideal for enhancing any dish.

Ebralga oil

Moraiolo, Leccino, Frantoio and Canino

Our Ebralga oil is born from the skillful blend of Moraiolo, Leccino, Frantoio, and Canino varieties. The combination of these four cultivars creates a rich and complex extra virgin olive oil, with vegetal notes, medium fruitiness, and a balanced harmony of bitter and spicy flavors.
